We have a local business down here, Neighborhood Organics, that is wonderful. They offer Co-op organic produce without the co-op commitment. Each week you can pick up a bag of local organic produce for $15 and be on your way. I love it! This was one week of produce for me.
There are 5 in my family, so this isn't near enough produce for us, but I don't let that stop me from utilizing their services. I chose to clean and chop all of this produce and made a week's worth of salads for me, so I could enjoy some quick and healthy lunches.

I didn't complete any specific recipe for these salads; I just chopped all of the vegetables and placed them on the bottom of the containers and then placed the lettuce on top. This keeps the lettuce from wilting. I also just made a really quick dressing which was just 1/4 cups of balsamic vinegar, 3 tbsp olive oil, 1 tbsp dijon mustard, and some salt and pepper to taste.
